Tasty Vegetable Curry

It hard to convince anyone (even the veg lovers) that cauliflower is as yummy as bacon! But if cooked in the right way with the right combinations, it actually can rival bacon! All you need to do to make a one pot veg curry is chop in cubes all the veges you have received in your basket this week. You can mix, the broccoli, Cauliflower, Carrot, leek, potatoes and peas. Heat a nonstick pan; add 3 tablespoons of sunflower oil, when hot add 3 tea spoons mixture of finely chopped garlic and ginger. Soon after add 1 piece chopped leek onion and 3 chopped tomatoes. Let this mixture cook for 5 minutes covered and under low heat. When well-cooked and mushy add all the remaining veges. Mix well and cover. Cook under very very low heat. This is the secret, DO NOT ADD WATER! The water is the bandit that escapes with all the flavors! I repeat DO NOT add WATER! Vegetables have their own water. If you don’t believe me try it. Mix well after about 20 minutes they should be soft and ready to eat. If per chance they are not cooked to your satisfaction, and sticking to the pan, I can allow you to only add 3 tablespoons of HOT water and let it continue cooking for another 10 minutes . Remember to adjust the salt and pepper and garnish with a bunch of coriander, serve hot with chapatti or Rice.
