Process 2 cups of spinach, 1 cup of diced avocado, ½ cup of sour cream, 2 chopped red onions, 1 tablespoon of lime juice, 1 clove of garlic, a pinch of salt, a pinch of black pepper in a food processor until smooth. Scrape dip into a serving bowl, cover with plastic wrap, and refrigerate until chilled, at least 1 hour. Served when it’s chilled.
